Come spend a workday with me! Here’s everything I ate in a day as a plastic surgery nurse, from overnight oats before heading out the door to my nightly sweet treat.
On workdays, I’m all about keeping things EASY. I want meals and snacks that I can prep ahead, pack with me, and actually look forward to eating when I finally get a break.
Nothing fancy, nothing perfect, just a realistic day of food that keeps me fueled through a busy day at work.
Breakfast: Berries & Cream Overnight Oats + Pumpkin Spice Latte
Breakfast was my berries & cream overnight oats, which are perfect for work mornings because I can make them ahead of time and literally just grab them from the fridge.
And obviously, we needed coffee.
I made a pumpkin spice latte to take with me because if I’m heading into work in the fall, there is approximately a 100% chance some version of pumpkin coffee is coming too.
Morning Snack: Strawberry Granola Bites
For my first snack of the day, I packed MadeGood Organic Granola Bites in the strawberry flavor.
Work snacks need to be something I can grab quickly, and these are perfect to throw in my bag for when I need a little something between breakfast and lunch.
Lunch: Chicken Bacon Ranch Orzo
Lunch was chicken bacon ranch orzo, and THIS is exactly the kind of meal I love prepping ahead for work.
It’s filling, easy to pack, and most importantly, actually something I’m excited to eat when lunchtime rolls around.
I also had a Cherry Diet Coke because there is just something about an ice-cold Diet Coke with lunch that hits differently.
And for something sweet afterward, I had SkinnyDipped dark chocolate coconut almonds.
Afternoon Snack: Fresh Berries
My second snack was super simple: raspberries and blackberries.
I love packing fresh fruit with my work lunches because it’s easy, refreshing, and requires approximately zero effort.
Dinner: Chopt Mexican Caesar Salad
After work, dinner was a Mexican Caesar salad from Chopt.
Some nights I’m cooking dinner at home, and other nights grabbing something on the way home is exactly what makes sense.
A good salad that somebody ELSE had to chop for me after a full workday? Sign me up.
Dessert: Yasso Fudge Chocolate Chip Frozen Greek Yogurt
And of course, we ended the night with something sweet.
Dessert was a Yasso fudge chocolate chip frozen Greek yogurt cup.
Having dessert or something sweet at the end of the night is pretty standard around here, and these are such an easy one to keep stocked in the freezer.
Keeping Workday Meals Simple
My biggest priority with food on workdays is making it easy on myself.
Prepping breakfast the night before, packing a couple of snacks, and having lunch ready to bring with me means I’m not trying to figure out what to eat in the middle of a busy shift.
And dinner doesn’t always have to be homemade either. Some days it’s a meal I’ve prepped, some days I cook, and some days it’s a Chopt salad on the way home.
A realistic day of eating doesn’t need to be perfectly planned or complicated. For me, it’s about having foods I enjoy, keeping myself fueled throughout the day, and yes… always saving room for something sweet.
